Ingredients

Directions

Prepare the sweetbreads

  1. Soak the sweetbreads in cold water for 1 hour, then remove the skin.

  2. Parboil the sweetbreads for 20 minutes and place them on a napkin with a heavy weight to press them solid.

  3. Lard the sweetbreads with the fat salt pork using a larding needle.

Braise

  1. Melt the butter in a shallow saucepan, then add the sweetbreads one by one.

  2. Season with salt and black pepper, then add the sliced carrots and the bouquet of herbs.

  3. Cover the saucepan with oiled brown paper and cook slowly, uncovering occasionally and turning until golden.

  4. Add the beef stock and let it simmer for 1 hour until the sweetbreads are ready to serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Main protein; parboiling firms them and pressing gives a dense, sliceable texture.
Fat salt pork
Adds fat and richness as it is larded through the sweetbreads, keeping them moist while cooking.
Butter
Browns the sweetbreads in the pan and adds rich flavour.
Carrots
Add sweetness and aromatic flavour to the braising liquid.
Beef stock
Provides liquid for the slow simmer, adding savoury depth and moisture.

The step that matters

Cook slowly under oiled paper, turning until golden. Gentle, covered cooking with occasional turning browns the sweetbreads evenly without drying them. Too much heat can toughen the delicate meat and scorch the butter.

Swap the carrot

How well each one fits the dish's main ingredients (pork, butter, pepper, thyme, beef):

  1. Potatofits better
  2. Tomatofits about as well
  3. Capsicumfits about as well
