Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Butter a deep tin dish.

  2. Add a layer of grated bread or cracker crumbs.

  3. Sprinkle with pepper and bits of butter.

  4. Add a layer of chopped clams with butter and pepper.

  5. Repeat layers of crumbs and clams until the dish is full.

  6. Finish with a layer of crumbs and plenty of butter on top.

  7. Add 1 cup of rich milk and cover with a plate.

  8. Bake at 350°F (175°C) for 45 minutes.

  9. Remove the plate to brown the top before serving.
