Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Stewed Fowl with Rice

Ingredients

Directions

Stew the fowl

  1. Stew the trussed fowl in mutton broth seasoned with pepper, salt, and mace for 1.5 hours, skimming often.

  2. Add the rice to the pot about 30 minutes before serving.

Finish and serve

  1. When the rice is tender, strain the broth and place the rice on a sieve to dry and swell by the fire.

  2. Keep the fowl hot, then place it in the center of a hot dish with the rice arranged in a high border around it.

  3. Serve with parsley and butter sauce in a tureen.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fowl
Provides the main cooked meat, becoming tender and flavourful as it stews slowly in the broth.
Mutton broth
Cooks the fowl gently and carries seasoning, so the meat absorbs flavour as it simmers.
Rice
Absorbs liquid as it cooks, swelling into a tender starchy base that forms the border around the fowl.
