Roast Turkey

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the turkey

  1. Preheat the oven to 350°F (175°C).

  2. Clean and singe the turkey.

  3. Wipe the turkey with a damp towel.

  4. Prepare the dressing by mixing bread crumbs, butter, thyme, salt, and pepper.

  5. Stuff the turkey with the dressing.

  6. Tie the turkey securely.

  7. Lard the top of the turkey or lay bacon slices over it.

  8. Wet the skin of the turkey.

  9. Sprinkle the skin with pepper, salt, and flour.

  10. Let the stuffed turkey rest for a while before cooking.

Roast

  1. Roast the turkey for at least 3.5 hours, basting frequently with butter and its own drippings.

  2. Add more melted butter to the turkey before removing it from the oven.

  3. Sprinkle the turkey with flour for a crisp skin.

Make the gravy and serve

  1. Boil the giblets.

  2. Chop the giblets finely.

  3. Mash the liver.

  4. Place the cooked turkey on a hot dish.

  5. Dredge flour in the baking pan.

  6. Stir in boiling water or stock.

  7. Strain the mixture.

  8. Add the giblets to the gravy.

  9. Serve the turkey with cranberry jelly.

What each ingredient does

Turkey
Forms the main structure and lean meat of the dish, cooked through by long roasting.
Butter
Adds fat and richness, moistens the dressing, and helps the skin brown during basting.
Bread crumbs
Form the dressing that fills the bird, absorbing juices and adding soft texture.
Dried thyme
Adds a savory, aromatic herb flavor to the dressing.
Flour
Dusted on the skin to help it crisp and brown, and thickens the pan drippings for gravy.
Giblets
Simmered and chopped to add savory depth and body to the gravy.

The step that matters

Roast the turkey for at least 3.5 hours, basting frequently. A large stuffed bird must be cooked long enough for the thick meat and stuffing to reach a safe temperature, and regular basting keeps the surface moist while the skin browns.

Swap the cranberry

How well each one fits the dish's main ingredients (turkey, butter, thyme, pepper, bread, flour):

  1. Lemonfits about as well
  2. Cranberrythe original
  3. Figfits about as well
  4. Plumfits less well

Fit is the average pairing score against turkey, butter, thyme, pepper, bread, flour. Candidates are from the same food group and used in at least 100 recipes.
