Prepare

  1. Parboil the eggplants to remove bitterness.

  2. Slit each eggplant down the side and remove the seeds.

Stuff and bake

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplants
Provide the main body that softens and holds the stuffing while baking.
Bread crumbs
Absorb butter and juices to form a moist, soft filling.
Butter
Adds fat and richness, carrying flavour and keeping the filling moist.
Beaten egg yolk
Binds the filling and helps it set lightly as it bakes.

The step that matters

Parboil the eggplants. Parboiling softens the flesh and draws out bitter compounds before stuffing. Skipping or shortening it leaves the eggplant tasting bitter and firm once baked.
