Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold cream
Whipped to a light foam that folds into the custard for a airy, creamy texture.
Cream or rich milk
Forms the rich base that carries the vanilla and sugar flavor.
Gelatine
Sets the custard so it holds its shape when chilled in molds.
Egg yolks
Enrich the custard and add body and a smooth, thickened texture.

The step that matters

Stirring the cooled custard until smooth. If the mixture is too hot when the egg yolks go in, they can scramble, and if it thickens unevenly it sets lumpy. Stirring continuously as it cools keeps the gelatine and yolks evenly dispersed for a smooth set.
