What each ingredient does

Clams
Provide the main seafood flavor and tender texture in the chowder.
Potatoes
Thicken the broth slightly as they cook and add body to the chowder.
Pork
Browning in the pot adds savory, rich flavor to the base.
Cream
Adds richness and a smooth, creamy body to the finished chowder.
Onion
Adds aromatic sweetness and depth as it softens in the broth.

The step that matters

Boil until tender. Boiling only until the potatoes are tender keeps them intact and the clams from toughening. Adding cream after the boil keeps it from curdling or breaking.

Swap the onion

  1. Capsicumfits better
