Why it works: Beans and mustard match in chemistry and in kitchens. They rank in the top 4% of all ingredient pairs, and cooks put them together in 852 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

What each ingredient does

Beans
Provide the main body and starchy structure of the dish.
Bacon or salt pork
Adds fat and savory flavor that seeps into the beans during slow baking.
Molasses
Adds sweetness and deep color while contributing to browning during long baking.
Mustard
Adds a sharp, tangy note that balances the sweetness of the molasses.

The step that matters

Keep the beans covered with water while baking. Beans that dry out during the long bake can toughen and scorch on top. Adding water as needed keeps them tender and helps the sauce thicken gradually.
