Mocha Tart

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, beat the egg yolks and powdered sugar until light.

  3. Add the mocha extract to the yolk mixture.

  4. In a separate bowl, beat the egg whites until stiff peaks form.

  5. Gently fold the egg whites into the yolk mixture.

Bake and fill

  1. Pour the batter into layers and bake until set.

  2. For the filling, whip the cream and sweeten to taste.

  3. Add 2 ½ teaspoons of mocha extract to the whipped cream and mix well.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites give the batter its light, airy structure, and yolks add richness.
Powdered sugar
Sweetens the batter and dissolves easily into the yolks for a smooth texture.
Flour
Provides the structure that holds the layers together once the batter sets.
Baking powder
Releases gas in the oven so the batter rises and becomes tender.
Cream
Whipped, it forms the rich, light filling and adds fat and moisture.

The step that matters

Folding the egg whites into the yolk mixture. Folding gently preserves the air whipped into the egg whites. Stirring or deflating them makes the batter dense and flat after baking.
