Ingredients

Directions

The book says “a very moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Roll out the pie crust very thin.

  2. Sprinkle with grated sharp cheese and a dusting of cayenne pepper.

  3. Fold the crust in thirds and roll out again, dusting with cheese a second time.

  4. Roll out quite thin and cut into fine strips or straws.

  5. Bake in a moderate oven at 350°F (175°C) until golden.
