Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make and shape the loaf

  1. In a large bowl, mix the minced veal, melted butter, celery salt, mustard, tomato ketchup, beaten eggs, and rolled crackers thoroughly.

  2. Shape the mixture into a loaf and roll it in additional cracker dust.

  3. Place bits of butter on top of the loaf to help it brown.

Bake

  1. Bake for about 1.5 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf and gives it a meaty texture.
Eggs
Bind the mixture together so the loaf holds its shape when sliced.
Rolled crackers
Absorb moisture and add bulk, helping the loaf hold together.
Butter
Adds richness and helps the top of the loaf brown.
Tomato ketchup
Adds moisture and sweet-tangy flavor to the loaf.

The step that matters

Mixing the loaf thoroughly. Raw meat must be evenly combined with the eggs and crackers so the binders are distributed through the loaf. Uneven mixing can leave dry or loose pockets that crumble when sliced.

Swap the tomato

How well each one fits the dish's main ingredients (veal, butter, celery, mustard, ketchup, egg):
