Portable Soup, or Glaze

Ingredients

Directions

  1. Remove the fat from the top of the boiled meat and place it in a large pan.

  2. Heat over a clear fire, skimming off any impurities as it boils.

  3. Once thickened, strain it through a silk sieve into a smaller pan.

  4. Stir continuously over the fire until it reaches a sauce-like thickness.

  5. Pour into pots for storage.

  6. To use, cut a piece from the pot, place it in a small pan with a bit of butter and broth to prevent burning.

  7. Stir over heat until dissolved, then use to glaze meat.
