Mince Veal in a Timbale
Ingredients
Directions
The book says “a gentle oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.
Prepare minced veal as per your preferred recipe and keep it warm.
Fry plain pancakes without sugar or lemon peel.
Butter a round or oval mold.
Line the bottom and sides of the mold with pancakes.
Spread the minced veal on the pancakes, rolling them up neatly and placing them closely in the mold.
Cover the top with another pancake.
Bake in a gentle oven at 300°F (150°C) for half an hour before serving.
Turn out onto a dish and add a little strong gravy at the bottom.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
