Leg of Lamb with Spinage

Ingredients

Directions

  1. Pick the lettuces from the stalks and wash them in a large pan of water.

  2. Blanch the lettuces, then drain them in a sieve for a few minutes.

  3. Rub the lettuces through a plate with a wooden spoon and let them drain again for 1-2 hours.

  4. In a small stewpan, stir the drained lettuces with a bit of butter until they begin to fry.

  5. Add a little good consommé and reduce it, then mix in the cream sauce and let it boil for a few minutes.

  6. Before serving, mix in the yolks of two eggs, ensuring the dish is hot.

  7. Dress the lamb over the prepared spinach and garnish with the cutlets.
