Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolk
Thickens the finished sauce and gives it a smooth, rich body.
Cream
Adds richness and a silkier texture to the sauce.
Sherry
Adds acidity and depth of flavour as the sauce reduces.
Consommé
Provides the liquid base and savoury flavour of the sauce.

The step that matters

Stir in the egg yolk without boiling. Egg yolk thickens by gently coagulating its proteins. If the sauce is too hot or boils after it is added, the yolk can scramble and turn grainy, so heat should stay below boiling once it goes in.
