Fillets of Partridges Grillees

Ingredients

Directions

  1. Remove the fillet and merry-thought bone from the partridges, keeping part of the bone in the thick end.

  2. Carefully cut off the thin under skin.

  3. Place the bone back in the thin end to resemble a cutlet.

  4. Beat the egg with pepper and salt, then coat the fillets in the mixture.

  5. Cover the fillets with bread crumbs and lay them on paper.

  6. Dip the fillets in clarified butter and coat them with bread crumbs again.

  7. Broil over a moderate charcoal fire until light brown.

  8. Arrange the fillets neatly on a dish and pour butter sauce mixed with glaze, lemon juice, and a little pepper and salt in the center.
