Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Egg yolks
- Emulsify the butter and set into a thick, smooth sauce when gently heated.
- Butter
- Provides fat and richness, forming the body of the sauce when emulsified with the yolks.
- Elder vinegar
- Adds acidity that sharpens the flavour and balances the richness of the butter.
- Parsley
- Adds fresh herbal aroma and colour to the finished sauce.
The step that matters
Stir over moderate heat until it begins to boil. Egg yolks thicken from gentle heat but scramble if overheated. Stirring constantly over moderate heat keeps the yolks smooth and lets the emulsion set into a sauce.
