Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the salmon

  1. Truss the salmon with kitchen twine as you would for boiling.

  2. Prepare a stuffing by mixing bread crumbs, pepper, salt, chopped herbs, butter, and 2 eggs.

  3. Stuff the mixture inside the salmon and skewer it closed.

Coat and bake

  1. Beat 1 egg with pepper and salt, then brush it over the salmon.

  2. Sprinkle bread crumbs over the salmon, then drizzle with clarified butter and add more bread crumbs.

  3. Bake in a hot oven at 400°F (200°C) until golden brown.

  4. Remove the skewer and twine before serving with pike sauce underneath.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salmon
Forms the main body of the dish, cooked gently in the oven until it flakes.
Bread crumbs
Absorb moisture in the stuffing and form a crisp, golden crust on the outside.
Eggs
Bind the stuffing together and, when brushed on, help the surface brown.
Butter
Adds richness and fat, and helps the crumb coating brown.

The step that matters

Bake in a hot oven until golden brown. A hot oven browns the crumb coating quickly while the fish cooks through. Watching colour and checking that the salmon flakes easily at the thickest point helps avoid dry, overcooked fish.
