Why it works: Sugar and sauce match in chemistry and in kitchens. They rank in the top 13% of all ingredient pairs, and cooks put them together in 5,147 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓
Sorrel in a Purge
Ingredients
Directions
Wash and drain the sorrel well.
Melt a bit of butter in a stewpan, add the sorrel, cover, and cook gently until well done.
Drain the sorrel on a fine sieve for a few minutes.
Rub the drained sorrel through a plate.
Return the puréed sorrel to the stewpan with a bit of butter, a little sugar, and salt.
Cook it similarly to spinach, using béchamel or cream sauce instead of sauce tournée.
