Petits Choux Meringues

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Bake gateaux de boulogne without almonds and cut off the tops.

  2. Fill the gateaux with Italienne cream.

  3. Beat the egg whites until frothy, then gradually add powdered sugar until smooth.

  4. Drop the meringue mixture onto the filled petits choux.

  5. Dust with sugar and bake in a slow oven at 300°F (150°C) until light in color.

  6. Serve hot.
