Yorkshire Pudding
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Preheat your oven to 400°F (200°C).
Coat a shallow copper pan with good dripping.
Prepare a stiffer batter as you would for batter pudding.
Place the batter in the pan under the meat while it cooks until well browned.
After cooking, place the pudding over a stove for a few minutes to brown the underside.
Sprinkle a little salt over the pudding, cut it into squares, and serve.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
