Barberry Jam

Ingredients

Directions

Prepare the barberries

  1. On a dry day, gather the barberries and remove them from the stalks.

  2. Place the barberries in a jar and bake in the oven until thoroughly done.

  3. Pass the cooked barberries through a wire sieve to remove the skins.

Make the jam

  1. Weigh the pulp and for every pound, add an equal amount of sugar.

  2. Boil the mixture until it reaches caramel height, about ten minutes.

Pot and seal

  1. Pour the jam into pots and cover with apple or currant jelly, then seal with a brandy paper.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Barberries
Provide the main fruit flavour, tartness and the pulp that forms the jam.
Sugar
Adds sweetness and, once boiled, helps the jam thicken and keep.
Apple jelly or currant jelly
Covers the top of the jam in the pots, adding pectin and a protective layer.

The step that matters

Boiling to caramel height. Boiling sugar and fruit pulp too briefly leaves the jam runny, while boiling too long can scorch the sugar and darken the flavour. Stop when the set is reached, about ten minutes here.

Swap the apple

How well each one fits the dish's main ingredients (sugar, brandy):

  1. Vanillafits better
  2. Apricotfits better
  3. Raisinfits better
  4. Applethe original

Fit is the average pairing score against sugar, brandy. Candidates are from the same food group and used in at least 100 recipes.
