Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Clams
Provide the main flavour and texture of the soup.
Butter
Adds richness and fat, giving the soup a smooth mouthfeel.
Milk
Forms the creamy base of the soup.
Flour
Thickens the milk and broth so the soup becomes creamy.

The step that matters

Stir the flour cream into the soup. Flour mixed with cold milk forms a smooth slurry that thickens evenly when stirred into hot liquid. Added dry or to a boil without stirring, it clumps and leaves a pasty texture.

Swap the mace

The recipe marks mace as optional. How well each one fits the dish's main ingredients (clam, pepper, butter, egg, milk, flour, cream):

  1. Nutmegfits better
  2. Parsleyfits better
  3. Cinnamonfits better
  4. Macethe original

Fit is the average pairing score against clam, pepper, butter, egg, milk, flour, cream. Candidates are from the same food group and used in at least 100 recipes.
