Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the main meat, which becomes tender and flavourful during the long, gentle cooking.
Suet crust
Forms a sealed, sturdy casing that holds the filling and keeps it moist while boiling.
Butter
Adds richness and fat that carries flavour and helps brown the meat at the start.
Bacon
Adds salty, smoky fat that flavours the meat and the gravy.

The step that matters

Keep the water boiling for the full cooking time. If the water drops below a steady boil, the pudding cooks unevenly and the suet crust can turn heavy or doughy. Steady heat cooks the filling through and keeps the crust light and moist.

Swap the thyme

How well each one fits the dish's main ingredients (veal, egg, butter, pepper):

  1. Parsleyfits better
  2. Sagefits better
  3. Nutmegfits better
  4. Thymethe original

Fit is the average pairing score against veal, egg, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
