Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Cut a slice from the stem end of each tomato and scoop out the pulp.

  2. In a bowl, mix the tomato pulp, chopped onion, bread crumbs, sweet cream, salt, and pepper.

Stuff and bake

  1. Fill the tomato shells with the mixture and replace the tops.

  2. Place the tomatoes in a buttered baking dish and drop a small lump of butter on each.

  3. Bake at 400°F (200°C) for about 30 minutes until well done.

  4. Serve in the same dish.

What each ingredient does

Tomatoes
Hold the filling as their shells cook, and release moisture that softens the stuffing.
Bread crumbs
Absorb liquid from the pulp and cream, giving the filling body so it holds its shape.
Sweet cream
Adds moisture and richness, helping the filling stay soft and creamy as it bakes.
Onion
Adds savory depth and aroma to the filling as it cooks.
Butter
Adds fat that promotes browning on the tomato tops and enriches the flavor.
