Make the filling

  1. Heat two-thirds of the milk in a saucepan until boiling.

  2. In a separate bowl, stir together the sugar, flour, and eggs with the remaining milk.

  3. Once the milk boils, pour the mixture into the saucepan and cook until thickened like custard.

  4. Remove from heat and let cool, then stir in the vanilla extract.

Finish and fill

  1. If desired, mix in the chopped hickory nuts before spreading between cake layers.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set and thicken the custard as they cook, giving the filling body.
Flour
Thickens the custard by absorbing liquid as it heats, giving a spreadable texture.
Milk
Forms the liquid base of the custard that thickens into the filling.
Sugar
Sweetens the filling and helps keep it smooth and tender.

The step that matters

Cook until thickened like custard. Eggs and starch thicken only when heated enough, but overheating can curdle the eggs or leave the flour tasting raw. Watch for the mixture to coat a spoon, then remove it from heat promptly.

Swap the nuts

The recipe marks nuts as optional. How well each one fits the dish's main ingredients (milk, egg, flour, sugar, vanilla):

  1. Almondfits better
  2. Chestnutfits better
  3. Hazelnutfits better
  4. Nutsthe original

Fit is the average pairing score against milk, egg, flour, sugar, vanilla. Candidates are from the same food group and used in at least 100 recipes.
