Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sponge cake
Forms the base layer that soaks up the wine and holds the filling.
Sweet wine
Moistens and flavors the cake and sweetens the egg white mixture.
Egg whites
Whipped to a foam that lightens the filling and helps it set.
Powdered sugar
Sweetens the whipped egg whites and dissolves easily into them.
Thick sweet cream
Adds richness and a smooth texture to the filling.

The step that matters

Beat the egg whites until very light. Egg whites must be whipped to a stable foam before folding in other ingredients. Under-beaten whites stay dense and deflate, leaving a heavy filling; over-beaten whites turn dry and grainy and lose their ability to blend smoothly.
