What each ingredient does

Fruit juice
Provides the main flavour and acidity, and the liquid base of the ice cream.
Cream
Adds fat and richness, and whipped air gives the ice cream a light, soft texture.
Sugar
Sweetens the juice and lowers the freezing point, keeping the ice cream softer.

The step that matters

Whipping the cream to soft peaks. Cream under-whipped stays thin and folds in poorly, while over-whipped cream turns grainy and can separate. Soft peaks trap air that gives a light texture after freezing.
