Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the corn

  1. Score the kernels of the corn and cut them from the cob, then scrape off any remaining corn from the cob with a knife.

Make the batter

  1. In a bowl, combine the corn, milk, beaten eggs, flour, melted butter, sugar, and salt.

  2. Pour the mixture into a greased earthen dish.

Bake and serve

  1. Bake in a hot oven at 400°F (200°C) for 2 hours.

  2. Serve hot with fresh butter.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet green corn
Provides the main bulk, sweetness and tender texture of the pudding.
Eggs
Bind the mixture and set as it bakes, giving the pudding its firm custard-like structure.
Milk
Adds moisture and richness and helps form a soft, custard-like body.
Flour
Thickens the batter and gives the baked pudding body so it holds together.
Butter
Adds fat for richness, moistness and flavour.

The step that matters

Baking time and temperature. Eggs set into a custard as they bake, so a long bake at a hot oven can dry or overset the pudding if it is left too long. Check that the centre is just set rather than watery.
