What each ingredient does

Ripe tomatoes
Provide the main body, flavour and liquid base of the sauce.
Sugar
Adds sweetness and balances the sharpness of the vinegar.
Vinegar
Adds acidity that sharpens flavour and helps preserve the sauce.
Coarse sea salt
Seasons the sauce and draws out flavour from the tomatoes.

The step that matters

Boil for 4 hours, stirring occasionally. Long simmering thickens the sauce by evaporating water, while stirring prevents the sugars and solids from scorching on the bottom of the kettle.
