Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Provides fat and rich flavour as the base of the sauce.
Flour
Thickens the liquid into a smooth sauce as its starch swells when heated.
Water
Forms the liquid that the flour thickens into the sauce.

The step that matters

Stir in the flour until smooth, then add the water gradually. Adding liquid too fast or without stirring lets flour clump into lumps that cannot be fully smoothed out. Stirring while the water goes in keeps the starch dispersed so the sauce thickens evenly.

Swap the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (butter, flour):

  1. Jalapenofits better
  2. Capersfits better
  3. Nutmegfits better
  4. Parsleythe original

Fit is the average pairing score against butter, flour. Candidates are from the same food group and used in at least 100 recipes.
