What each ingredient does

Rabbit
Lean meat that becomes tender when gently simmered, forming the body of the stew.
Pickled pork
Adds salty, savoury flavour and fat that enriches the cooking liquid.

The step that matters

Boil gently after adding the rabbit. Keeping the water at a gentle simmer rather than a hard boil lets the meat cook through and turn tender. Vigorous boiling toughens muscle fibres and can break the meat apart.
