Why it works: Gelatin and sugar are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 2,778 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Directions
Prepare the gelatin
Soak the gelatin in cold water for about 30 minutes.
Make the jelly
In a saucepan, combine the eggs (with shells), sugar, and cold water.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Gelatin
- Sets the liquid into a firm, sliceable jelly as it cools.
- Eggs
- Help clarify the liquid as they coagulate, leaving it clearer and more transparent.
- Sugar
- Sweetens the jelly and balances its flavor.
The step that matters
Stir until the gelatin is dissolved. Undissolved gelatin granules will not set evenly and can leave a gritty or rubbery texture. The mixture must be fully warm and stirred so the gelatin disperses before it is poured and chilled.
