Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the meat flavor and gelatin that give the gravy body as it simmers.
Butter
Carries flavor and helps the veal and vegetables brown in the pot.
Onions
Browning the sliced onions adds sweetness and savory depth to the gravy.
Carrot
Adds gentle sweetness and aromatic flavor as it softens in the simmering liquid.

The step that matters

Boil gently for 2-3 hours, adding water if it reduces too much.. A gentle simmer draws gelatin and flavor from the veal slowly, while a hard boil reduces the liquid too fast and can make the gravy cloudy and overly concentrated. Keeping the meat covered preserves a balanced, clear result.

Swap the carrot

How well each one fits the dish's main ingredients (veal, butter, onion, thyme, meat):

  1. Leekfits better
  2. Potatofits better
  3. Shallotfits better
  4. Carrotthe original

Fit is the average pairing score against veal, butter, onion, thyme, meat. Candidates are from the same food group and used in at least 100 recipes.
