Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the bulk and tart fruit flavor that the meringue sits on top of.
Egg whites
Whip into a foam that sets when baked, forming the light meringue topping.
Powdered sugar
Dissolves easily into the whipped whites, sweetening the meringue and helping it stay glossy.
Sugar
Sweetens the cooked apples and balances their tartness.

The step that matters

Beat the egg whites to stiff peaks. Egg whites need to be whipped until they hold firm peaks so the meringue has enough air to stay light and set in the oven. Under-whipped or greasy whites will collapse or weep.

Swap the apple

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Applethe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
