Press and serve

  1. In a mold or pan, layer the light and dark meat until all is used.

  2. Add about 1 teacupful of the boiling liquid and place a heavy weight on top.

What each ingredient does

Chickens
Provide the meat that is pressed into a firm, sliceable loaf.
Boiling liquid
Adds moisture and savory flavor, helping the pressed meat stay moist and bind together.

The step that matters

Placing the heavy weight on top. Pressing while the meat is still warm and the liquid is added lets the pieces bind into a compact loaf. Pressing too loosely leaves gaps, so the set slices will crumble.
