Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the mixture so the croquettes hold their shape when fried.
Mashed potatoes
Add body and moisture, helping the filling stay soft and cohesive.
Gravy or drawn butter
Adds moisture and richness so the chicken does not dry out.
Cracker crumbs
Form a crisp, browned outer coating when fried.

The step that matters

Let the mixture cool quickly. A cooled, firm filling is easier to shape and less likely to crack or burst when rolled and fried. Cooling quickly also limits the time the mixture sits in the warm range where it can become sticky or loose.

Swap the potato

How well each one fits the dish's main ingredients (chicken, milk, egg, butter, pepper):

  1. Potatothe original
  2. Capsicumfits about as well
  3. Asparagusfits less well
  4. Tomatofits less well

Fit is the average pairing score against chicken, milk, egg, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
