What each ingredient does

Veal knuckle
Provides the main meat and, as it cooks, the gelatin that lets the mixture set firm.
Salt pork or ham
Adds savory, fatty flavor to the cooking liquid and the chopped meat.
Cooking liquid (in the method)
Carries meat flavor and gelatin from the boiled bones, binding the chopped meat when reduced.

The step that matters

Boil the cooking liquid down to 1 cup. Reducing the liquid concentrates its flavor and gelatin. Too much liquid stops the mixture from setting firm when chilled, so it will not hold its shape when sliced.
