Why it works: Clove and pepper match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 17,451 recipes. Both carry ethyl octanoate, which smells fruity, wine. The science ↓

Spiced Pot Roast

Ingredients

Directions

Marinate

  1. Spice the beef with onion, bay leaf, cloves, vinegar, salt, and pepper.

  2. If the vinegar is too strong, add a little water.

  3. Let the meat marinate for 24 hours.

Braise and finish

  1. Remove the beef from the marinade and brown it on both sides in a pot.

  2. Add the marinade juice and bring to a boil.

  3. Cover and simmer for 2 hours.

  4. Thicken the sauce with brown flour to make a good gravy.

  5. Stir in the butter before serving.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the main protein, which becomes tender through long, slow simmering.
Vinegar
Acidity in the marinade helps tenderise the meat and adds a sharp, tangy note.
Brown flour
Thickens the cooking liquid into a gravy as its starch swells with heat.
Butter
Adds fat and richness, giving the finished gravy a smoother mouthfeel and flavour.
Onion
Adds savoury sweetness and aromatic flavour to the marinade and braising liquid.

The step that matters

Browning the beef before simmering. Searing the meat on both sides builds deep, savoury browned flavours through the Maillard reaction. Browning must be done on dry meat in a hot pot, otherwise the meat steams and the flavour stays flat.

Swap the clove

How well each one fits the dish's main ingredients (beef, onion, vinegar, pepper, flour, butter):

  1. Garlicfits better
  2. Tarragonfits better
  3. Parsleyfits better
  4. Clovethe original

Fit is the average pairing score against beef, onion, vinegar, pepper, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
