Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Veal Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Remove the brown edges from the veal and slice the eggs.

Assemble and bake

  1. In a mold, layer the veal, ham, eggs, and parsley, adding a little pepper between each layer.

  2. Once the mold is full, pour strong stock over the layers to fill it.

  3. Bake at 350°F (175°C) for 30 minutes.

Serve

  1. Let it cool, then turn it out of the mold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold roast veal
Forms the main body of the cake and gives it its meaty texture.
Cold ham
Adds savory flavor and a contrasting texture between the veal layers.
Hard boiled eggs
Provide a firm, sliced layer that holds its shape when the cake is turned out.
Good gravy or stock
Moistens the layers and sets as it cools, binding the cake together.

The step that matters

Fill with stock before baking. Stock poured over the layers must reach the spaces between them. Gelatin in the stock sets as the cake cools, so it holds together when turned out of the mold.
