Why it works: Celery and pepper match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 16,012 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Egg Chops

Ingredients

Directions

Prepare the filling

  1. Chop the hard boiled eggs, onion, and celery tips together, not too finely.

  2. In a saucepan, boil the milk and flour together until thick to make a cream sauce.

  3. Mix the chopped ingredients with the cream sauce, seasoning with salt and red pepper.

  4. Once the mixture is perfectly cold, form it into chops.

Bread and fry

  1. Dip each chop into bread crumbs, then into the beaten eggs, and again into the bread crumbs.

  2. Fry the chops in hot lard until golden brown.

What each ingredient does

Hard boiled eggs
Form the bulk of the filling, giving the chops body and a firm, sliceable texture.
Milk and flour cream sauce
Thickens the chopped mixture so it binds together and holds its shape when formed.
Beaten eggs
Act as a binder so the bread crumb coating adheres to each chop.
Bread crumbs
Form a crisp outer crust that browns during frying.

The step that matters

Chill the mixture completely before forming. A warm, loose filling is too soft to hold its shape and can fall apart in the hot lard. Cooling lets the starch in the cream sauce set, so the chops keep their form when coated and fried.

Swap the onion

How well each one fits the dish's main ingredients (egg, celery, milk, flour, pepper, bread):

  1. Capsicumfits better
  2. Asparagusfits better
  3. Carrotfits better
  4. Onionthe original

Fit is the average pairing score against egg, celery, milk, flour, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
