Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green peppers
Form the edible shell that holds the filling and softens during pickling.
Cabbage
Provides the bulk of the crisp, mildly sharp filling.
Vinegar
Acidity that preserves the peppers and gives them their tangy flavor.
Sugar
Balances the sharpness of the vinegar with sweetness.
Horseradish
Adds a sharp, pungent heat to the filling.

The step that matters

Squeezing out the salted cabbage. Salting draws water out of the cabbage; if it is not squeezed well, excess liquid dilutes the vinegar brine and leaves the filling watery and less crisp.

Swap the celery

How well each one fits the dish's main ingredients (pepper, cabbage, mustard, horseradish, vinegar, sugar):

  1. Dillfits better
  2. Tarragonfits better
  3. Capersfits better
  4. Celerythe original
