Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the macaroni

  1. Break macaroni into 1-inch pieces.

  2. Boil the macaroni rapidly for 20 minutes.

  3. Drain the macaroni.

  4. Rinse the macaroni with cold water for a few minutes.

Make the cheese sauce

  1. Melt the butter in a saucepan.

  2. Add the flour to the melted butter.

  3. Add the milk to the mixture.

  4. Stir until the mixture boils.

  5. Remove the saucepan from heat.

  6. Add the cheese to the mixture.

  7. Stir until smooth. Add the baking soda.

Assemble and bake

  1. Stir the cooked macaroni into the cheese mixture.

  2. Transfer the mixture to a baking dish.

  3. Season with pepper and salt.

  4. Sprinkle bread crumbs on top.

  5. Dot the top with small bits of butter.

  6. Bake for a few minutes in a 400°F (200°C) oven.

What each ingredient does

Macaroni
Forms the bulk and body of the dish, giving the sauce something to cling to.
Butter
Adds richness and carries flavour, and helps the flour cook into the sauce base.
Flour
Thickens the butter and milk into a smooth, stable sauce.
Milk
Forms the liquid base of the sauce, giving it a creamy texture.
Cheese
Provides the main flavour and, when melted gently, the sauce's smooth, stretchy richness.
Baking soda
Raises the sauce's pH, helping the cheese melt smoothly instead of turning grainy.

The step that matters

Add the cheese after removing the saucepan from heat. Cheese is proteins and fat that toughen and separate when overheated. Melting it off the heat, with the sauce already thickened, keeps the sauce smooth rather than grainy or oily.
