Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat your oven to 300°F (150°C).

  2. Beat the egg whites until stiff and dry.

Make the meringue

  1. Gently fold in the powdered sugar and pineapple marmalade.

  2. Pour the mixture into an ungreased cake pan.

Bake and serve

  1. Place the cake pan in a larger pan filled with hot water.

  2. Bake for 45 minutes.

  3. Remove from the oven and transfer to a platter, avoiding drafts.

What each ingredient does

Egg whites
Whipped into a foam that traps air, giving the meringue its light, airy structure.
Powdered sugar
Sweetens the meringue and dissolves easily into the whipped whites, helping the foam hold together.
Pineapple marmalade
Adds sweetness, fruit flavor and moisture to the meringue.

The step that matters

Gently fold in the powdered sugar and pineapple marmalade. Whipped egg whites hold air in a fragile foam that gives the meringue its lift. Stirring hard or overmixing knocks that air out, leaving a dense, flat result that does not rise well in the oven.
