Sugar Crumb Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, rub together the flour, sugar, and butter-lard mixture until crumbly.

  3. Set aside 1 cup of the crumb mixture.

Make and bake the pie

  1. Mix the remaining crumbs with sweet milk, eggs, baking powder, and nutmeg.

  2. Pour the mixture into a pie dish and sprinkle the reserved crumbs on top.

  3. Bake for 30–40 minutes or until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the crumb and the custard-like filling together.
Eggs
Bind the filling and help it set firm as it bakes.
Butter and lard
Fat that rubs into the flour to make a crumbly texture and adds richness.
Baking powder
Releases gas during baking so the filling rises and becomes lighter.
White sugar
Adds sweetness and helps the top brown as it bakes.

The step that matters

Bake until golden brown. Baking for the full 30–40 minutes lets the eggs set the filling and lets the top brown. Pulling it early can leave a loose, wet centre.

Swap the nutmeg

How well each one fits the dish's main ingredients (flour, sugar, butter, milk, egg):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Jalapenofits less well
  4. Capersfits less well

Fit is the average pairing score against flour, sugar, butter, milk, egg. Candidates are from the same food group and used in at least 100 recipes.
