What each ingredient does

Vinegar
Provides the acidity that preserves the vegetables and gives the pickle its sharp flavour.
Carrots
Firm texture that holds up to brief simmering and stays crisp in the pickle.
Salsify
Firm, crisp texture that stays pleasantly bite-sized after brief simmering in vinegar.
Beet roots
Colour bleeds into the pickle and adds an earthy, slightly sweet flavour.
Onions
Sharp flavour that mellows in the vinegar brine while keeping some crunch.
Ginger
Adds a warm, aromatic bite that balances the sharpness of the vinegar.

The step that matters

Slightly boil the roots in vinegar, keeping them crisp.. Heat softens plant cell walls and pectin, so even a few extra minutes of boiling turns the roots limp. A brief simmer followed by cooling in the brine keeps them firm.
