Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks bind the corn and whites, whipped to a froth, lighten the batter for a tender interior.
Flour
Adds body so the spoonfuls hold together while frying.
Boiled corn
Provides the main bulk, sweetness and flavour of the oysters.
Butter
Conducts heat and browns the outside of each oyster, adding rich flavour.

The step that matters

Stir in the egg whites gently. Whipped egg whites trap air that gives lift. Vigorous stirring knocks that air out, leaving dense, flat oysters instead of light ones.
