Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatin-like setting agent that firms the milk mixture as it cools.
Milk
Forms the creamy liquid base that the isinglass sets.
Powdered almonds
Add nutty almond flavour and body to the mousse.
Loaf sugar
Sweetens the mousse to taste.
Whipped cream
Adds lightness and richness when served alongside.

The step that matters

Dissolving the isinglass in the milk. The isinglass must be fully dissolved by boiling before straining, otherwise undissolved pieces remain and the mousse will not set evenly. Boiling also ensures the setting agent is distributed through the milk, giving a smooth, firm texture once cooled.

Swap the almond

How well each one fits the dish's main ingredients (milk, sugar, cream):

  1. Almondthe original
  2. Chestnutfits about as well
  3. Pistachiofits about as well
  4. Hazelnutfits less well

Fit is the average pairing score against milk, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
