What each ingredient does

Gooseberries
Provide the tart fruit flavour and the bulk of the compote.
Sugar
Sweetens the syrup and balances the gooseberries' sharp acidity.

The step that matters

Simmer gently in the syrup. Gentle simmering softens the gooseberries while helping them keep their shape. A hard, rolling boil breaks the skins and turns the fruit mushy.
