Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Beat the eggs to a froth.

  2. Add the sugar and butter, and beat well together.

  3. Dissolve the baking soda in the milk.

  4. Rub the cream of tartar through the sifted flour with your hands.

Mix and bake

  1. Combine the eggs, sugar, butter, and flour mixture.

  2. Stir thoroughly and add flavoring to taste.

  3. Bake in a 400°F (200°C) oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten eggs trap air and add structure as the cake sets.
Butter
Creamed with sugar, it adds fat for a tender crumb and rich flavor.
Sugar
Beaten with butter, it sweetens and helps hold air in the batter.
Sifted flour
Provides the main structure that sets the cake as it bakes.
Baking soda
Dissolved in milk, it reacts with acid to help the cake rise.
Cream of tartar
An acid that reacts with baking soda to produce lift and a lighter crumb.

The step that matters

Dissolve the baking soda in the milk. Baking soda must be fully dissolved so it reacts evenly with the acid in the batter; clumps can leave bitter spots and uneven rising.
